There’s a well-known stereotype that college students are always broke and hungry. Unfortunately, it’s very true for a lot of people, including myself. Every Monday for the rest of the summer, I will provide a recipe that can produce multiple meals for under $10. Vegetarian meals will be included.
First up is the most important meal of the day — breakfast. For a grand total of about $8, you can create a delicious bacon and egg sandwich. To complete this recipe, you’ll need a toaster and one nonstick pan.
Ingredients you'll need (for one sandwich):
1. Two slices of white or wheat bread
2. One or two eggs
3. Pork/turkey/vegan bacon
4. Salt and pepper (if needed)
5. Hot sauce (if needed)
First, lay out two (or four if you want two sandwiches) slices of bread. Arrange them in a square on a plate, shown below.
Next, turn your stovetop burner to medium-high heat and let the pan warm up for a minute or so. Lay your bacon on the pan and let them cook for two minutes on each side. Take the heat down to medium and flip the bacon frequently to ensure even cooking. After 15 minutes, thick-cut bacon will be crispy and flavorful. Put the slices on a pan in the oven at 200 degrees to keep them warm. Do not drain the grease from the bacon; it will aid in cooking the eggs later. Delicious? Yes. Healthy? Not in the slightest.
At this point, take your bread slices and place them in the toaster for a minute and 30 seconds. Return the toasted slices to the plate.
Keep the stovetop at a medium heat and crack one egg into the pan (beware of splashback from the egg hitting the grease). Cook the egg until the white just becomes firm — there should be no transparent, jelly-like white left on the top. For over-easy eggs, carefully flip the egg and let it sit for seven to 10 seconds. Add salt and pepper to taste.
Take eggs off the heat and turn off the burner. Remove bacon from the oven. Carefully transfer the eggs from the pan and onto a slice of toast. Next, put desired number of bacon slices on top of the egg.
Adding hot sauce such as Tapatio or Tabasco is a good way to spice up the meal, and adding avocado slices is a good way to give the dish some green.
Lastly, pop the yolk and spread evenly over the sandwich like you would a butter or jam. Put the other piece of toast on top and enjoy.
